Chef Patrick's Cucumber Yogurt Sauce

Chef Patrick's Cucumber Yogurt Sauce is a tangy and creamy condiment that is refreshing and light making it the perfect dip or topping for grilled meats, salads or vegetables!


Ingredients

2 Cups Greek Yogurt

2 Large English Cucumbers

½ Cup Fresh Dill

Juice and Zest of 2 Lemons

1 TBSP Red Wine Vinegar

Salt - to Taste

Black Pepper - to Taste

5 Cloves Fresh Chopped Garlic


Directions

1. Remove the seeds of the cucumber by cutting the cucumber in half the long way, and then cutting those pieces in half again. Use a spoon or a knife to remove the seeds. 

2. Cut cucumbers into small pieces; about ¼ inch in size.

3. Apply a liberal dusting of salt to the cucumbers and set aside for 15 min, this will get some of the water out of the cucumbers so your sauce is thick and creamy.

4. Drain the liquid and pat dry with a paper towel,

5. Combine with all other ingredients, adjust seasonings as you see fit (salt and pepper mostly, but you can add more garlic if you want). 

6. Store in an air tight container for up to a week in your refrigerator.
